Recipe: Summer Couscous Salad

Ingredients:

3c. Cooked Israeli Couscous
1/4c Diced Bell Peppers
1/4c Onion
1/2c Fresh Cooked Corn
2c. Cooked chicken or Shrimp
salt and pepper to taste
2-4 TBSP Olive Oil

Directions:

  1. In a large bowl add all ingredients, but the seasoning
  2. Taste, then add oil and salt and pepper
  3. Refrigerate until ready to serve

(Feel free to get creative, add avocado, tomatoes, Cajun seasoning, or pesto.)
