Looking for a quick and easy holiday cookie? This variation on a gooey butter cookie uses gingerbread cake mix (although any cake mix can be substituted), and makes a fluffy, lightly spiced cookie.
Ingredients:
1 box gingerbread cake mix (any brand)
1 package (8 oz.) cream cheese, softened
1/2 cup (1 stick) butter, softened
1 egg
1/4 tsp vanilla extract
powdered sugar
Directions:
1. Preheat oven to 375o F.
2. In medium bowl, or in stand mixer with paddle attachment, beat cream cheese and butter until well blended. Stir in vanilla and egg. Add cake mix and stir until well combined.
3. Shape cookies into 1″ balls and roll in powdered sugar to coat. Place 1 inch apart on ungreased cookie sheets.
4. Bake 12-15 minutes or until set. Remove to racks to cool. Store in airtight container for up to 1 week.
